Lactation Cookies
Whether you’re a new mama or know someone who’s a new mama, these cookies are the perfect snack or gift!!
Gluten and dairy free - don’t worry your tastebuds will still have a little party!
Ingredients
2.5 cups organic oats
Oats are incredibly nutritive and supporting to the new mama’s gut & nervous system
1 cup organic oat flour or buckwheat flour
1/2 teaspoon of organic baking soda
1/2 teaspoon organic baking powder
1/2 cinnamon
Great for blood sugar regulation!
1/4 teaspoon celtic sea salt
High in minerals - mama needs her minerals!
1/2 - 3/4 cup of melted coconut oil
1 cup of coconut sugar (plus 1/4 cup of raw honey if you want extra sweetness)
2 tablespoons of flaxseed meal
A phytoestrogen to help regulate hormones. Also a great source of omega 3!
2 large eggs
1 teaspoon vanilla extract
1 tablespoon ground fenugreek
Amazing at supporting breastmilk production!
1 teaspoon shatavari (don’t make my mistake and overdose on the shatavari - it’s a bitter herb).
Shatavari is the queen of postpartum herbs and helps with mamas recovery & breastmilk supply
Method
Preheat oven to 180degrees. Line a baking tray with baking paper,
In a bowl mix the oats, oat/buckwheat flour, baking soda, baking powder, flaxseed meal, cinnamon, salt, fenugreek & shatavari.
In a seperate bowl mix the melted oil, coconut sugar/honey, vanilla and eggs.
Add the wet ingredients to the dry and mix thoroughly
Scoop a heaped tablespoon of the mixture into a ball and pop on the baking tray. Press down with a fork. Ensure the cookie balls have enough space between them on the tray.
Bake for 10-15 minutes (or until golden). Remove from the oven and let them cool (don’t worry if they’re soft, they’ll harden up)
